?jalapeno?sauce!?!

I have 31 jalapeno plants this year and ~~~~~~
here they come!!!!!!

Last time I had great succes pickling them.

I want to make a lot of sauce this year. I tried a small batch last week blending some vinegar, salt, cilantro and lime that is good & HOT.

    That's a whole lotta Jalapenos! I did that last year, but gave a bunch of the plants away because I had no time. I fine diced a bunch of the fresh peppers and froze them in airtight containers, then thawed them out a little at a time, it wasn't nearly as good as fresh, but it was still good!

    One sauce I made, more of a rub really, was garlic, jalapenos, lime zest, salt, white pepper, paprika and lemon grass. I ground it together in a food processor and I use it to rub on pork and shrimp for the grill. I froze a bunch of that too.

      That's prolly enough for about 50 gallons of hot sauce!

      I've always pickled them w/ cider vinegar, salt, peppercorns, garlic, and a few bay leaves. Can properly, allow to pickle a few months and then run it through a blender. You're gonna want a BIG blender!

        It's an interesting twist to add something unusual to a sauce....Try carrots....they use them in Marie Sharp's habanero hot sauce from Belize.....experiment, and enjoy!
